Teriyaki Chicken & Pineapple Kebabs

2 lbs chicken breast, cubed
1 large, fresh pineapple, cut and cubed
3-4 bell peppers (all colors or any that you prefer), cut and cubed
1 large red onion, cubed (optional)
Skewers, wood or metal
**makes approx. 12 skewers
MARINADE
1/2 cup coconut aminos
2 Tbsp water
2 tsp garlic powder
2 tsp onion powder
2 tsp dried ginger powder (add fresh ginger if you have on hand)
2-3+ Tbsp toasted sesame oil
Raw Honey (optional)
DIRECTIONS
1. Whisk marinade ingredients together;
2. Cut and cube chicken and vegetables;
3. Preheat grill and spray with nonstick grill spray;
4. Arrange skewers with chicken, vegetables, pineapple, and onions;
5. Pour marinade over skewers and drizzle with additional oil and honey (if desired);
6. Grill over medium heat, turning every 5 minutes or until the chicken is completely cooked and vegetables are tender.
NOTE
** If you have enough prep time, add chicken to marinade to marinate before assembling skewers.
** If you use wood skewers, soak in water prior to adding food items to prevent wood burning.
