1 medium red pepper
1 medium orange pepper
1 medium yellow pepper
1/2 medium onion or 1-2 shallots
1/4 cup olive or avocado oil
3 Tbsp of taco seasoning
Salt and Pepper to taste

DIRECTIONS

  1. Preheat Oven to 400 Degrees

  2. Slice the chicken into thin strips.  Slice peppers and onion (or shallots) into thin strips. Spread out chicken and peppers on a non-stick baking sheet. (you can add other veggies here as well if you choose)

  3. Drizzle with oil and sprinkle with taco seasoning; coat well.

  4. Bake for 20-25 minutes, or until chicken is cooked through. Season with salt and pepper to taste.

  5. Serve with cauliflower rice or toasted Outer Aisle Cauliflower Sandwich Thins. (https://a.co/d/aNECpet).  Serve with fresh avocado and dairy free sour cream and dairy free shredded cheese (https://a.co/d/fCk1BIM) - if you are in your Dairy RESET

TACO SEASONING: Many store bought taco seasonings are full of sugar! Simply Organic Southwest Taco Seasoning: https://a.co/d/3m5L2Zd

HOMEMADE TACO SEASONING
2 Tbsp chili powder
2 Tsps ground cumin
1-2 Tsp garlic powder
1/2 Tsp onion powder
1 Tsp dried oregano
1/2 Tsp paprika (smoked if you prefer)
