Amazing Broccoli Salad

SERVES 8

SALAD MIXTURE
1/4 cup sunflower seeds, pepitas, or chopped walnuts
3-4 slices of nitrate/nitrite free (no sugar added) bacon
1 large head of broccoli, washed and cut into small florets
1 cup seedless grapes, halved
1/4 cup chopped shallots (or red onions if you prefer)

DRESSING
1/2 cup avocado mayo 
3 Tbsp of apple cider vinegar
1 Tsp of fresh garlic paste (or more if you prefer)
1/2 Tsp pink Himalayan sea salt
Ground pepper to taste
 
DIRECTIONS

  1. In a hot skillet, add almonds toast nuts/seeds of choice; remove from pan to cool

  2. Add bacon and cook until crispy, drain on paper towel, chop

  3. Combine: broccoli, grapes, shallots, nuts/seeds, and bacon- set aside

  4. Combine: mayo, vinegar, garlic, salt and pepper. Whisk to combine.

  5. Pour dressing over salad mixture.
