Broccoli Cole Slaw Salad

SERVES 8

INGREDIENTS
2 (10-12 ounce) bags of Broccoli Slaw Mix
1 cup fresh herbs such as basil cilantro, parsley (flat leaf)
1/4 cup scallions or shallots (chopped well)
1/2 cup toasted sunflower seeds or pepitas
1/2 cup avocado mayo
1/4 cup of plain, full fat yogurt (or plant based alternative)
1/2 Tsp of Monk Fruit or Stevia (or to your liking)
1/4 Tsp - 1/2 Tsp Pink Himalayan Salt (to your liking)
2 Fresh Limes (or good quality lime juice) Juiced
 
DIRECTIONS

  1. Whisk together: mayo, yogurt, monk fruit/stevia, salt and lime juice.

  2. Add Broccoli Slaw mix, herbs, scallions/shallots, and seeds.

  3. Refrigerate for a few hours and serve cold!
