Ham and Egg Breakfast Cauliflower Round Breakfast Sandwich

SERVES 2

INGREDIENTS
1/2 medium avocado
2 Tbsp green onions, diced
1 Tbsp lime juice
1 garlic clove
4 Outer Aisle Grain-Free Sandwich Rounds, toasted 
3/4 cup fresh spinach
2 oz nitrate/nitrite free low sodium ham
2 eggs (or use egg whites for a lower cholesterol option)-cooked how you like
2 Tbsp fresh salsa
 
DIRECTIONS
Place avocado, green onion, lime juice, and garlic in a small bowl, and mash with a fork. Spread mixture on both sides of sandwich rounds. Top with spinach, ham and eggs.
