Egg White Bites with Vegetables

MAKES 12

INGREDIENTS
1 cup fresh spinach or asparagus (chopped)
1 cup cherry tomatoes, diced
4 cups egg whites (whisked)
1/4 cup crumbled feta (if desired)
Salt and pepper to taste
 
DIRECTIONS
Preheat oven to 350 degrees and spray muffin pan with olive oil cooking spray. Evenly distribute the chopped spinach (or asparagus) into the bottom of the muffin tins and top with cherry tomatoes. Pour the egg whites almost to the top of each muffin tin and season with salt and pepper to taste. Top with a small pinch of crumbled feta. Bake for 17-20 minutes, or until egg whites are set and edges start to brown. Remove from oven and cool.
