Salmon Frittata with Goat Cheese

SERVES 4-6

INGREDIENTS
2-3 Tsp Extra Virgin Olive Oil (cold pressed)
1 bunch green onions or 1 medium scallion
2 cloves garlic, minced
5 ounces fresh spinach, chopped
12 large eggs or egg whites or combo of yolks and whites
1/2 milk or milk alternatives choice
8 ounces of fresh smoked salmon, chopped (no skin)
4 ounces of goat cheese, crumbled
2 Tbsp of fresh chives, chopped
Salt and pepper to taste
 
DIRECTIONS
Preheat oven to 375 degrees. Heat large oven-safe skillet, and then add oil to coat pan. Add green onions or scallions and garlic and cook for 2-3 minutes. Add spinach and cook until wilted. Whisk eggs and milk in a small bowl and add chives, and salt and pepper to taste. Reduce heat and add smoked salmon evenly over spinach, green onion (or scallions) and garlic mixture. Pour egg mixture over top and then top evenly with goat cheese. Cook for 3-4 minutes, or until the sides start to set. Transfer to over and bake for 18-20 minutes, or until center is firm. Remove from oven and let stand for 5 minutes.
