Sweet Potato Toast

SERVES 1

INGREDIENTS
1 large sweet potato
1/2 large avocado, sliced
1/4 cup fresh berries of choice
1 Tsp Orgain protein powder (or other low sugar alternative); your flavor choice
1 Tsp hemp or chia seed
1/2 cup plain yogurt of choice, full-fat
1/2 Tsp Monk Fruit
Coconut Spray
 
DIRECTIONS
Wash sweet potato and pat dry, cut 2 vertical slices (as thick as finger). Spray with coconut oil or olive oil. Place in air fryer for 20 minutes on 400 degrees, flip at mid point, and plate. Mix 1 tsp protein powder into yogurt and spray evenly on sweet potato. Top with fresh berries. Add hemp or chia seeds.
