Bacon & Broccoli Egg Burrito

SERVES 1

INGREDIENTS
1 sliced nitrate/nitrite free turkey bacon, cooked well
1 cup chopped broccoli
1 large egg (or 2 egg whites)
1 Tbsp almond milk (or other non-dairy milk of choice)
1 green onion, diced
1/8 Tsp salt
1/8 Tsp pepper
2 Tsp avocado oil
2 Tbsp of dairy free cheese (or cheese of choice if desired)
2 Tbsp fresh salsa or 1/4 cup of tomato, chopped
 
DIRECTIONS
Spray nonstick pan with avocado oil spray or alike. Cook turkey bacon until well done, chop and set aside. Add broccoli to the pan and add 1 Tsp avocado oil, and cook until soft. Stir in salsa into broccoli mixture and heat, then set aside in a bowl. Whisk egg, milk, scallions and salt and pepper in another bowl. Add 1 Tsp of avocado oil to the skillet and pour in eggs, spread evenly and cook undisturbed until the bottom set on bottom, about 2 minutes. Using a wide spatula, carefully flip the egg and let cook for approx 1 more minute, or until set. Fill the lower half of the egg with broccoli mixture, fold like a tortilla and sprinkle with dairyfree cheese or cheese of choice.
