Bacon & Broccoli Egg Burrito

1 sliced nitrate/nitrite free turkey bacon, cooked well
1 cup chopped broccoli
1 large egg (or 2 egg whites)
1 Tbsp almond milk (or other non-dairy milk of choice)
1 green onion, diced
1/8 Tsp salt
1/8 Tsp pepper
2 Tsp avocado oil
2 Tbsp of dairy free cheese (or cheese of choice if desired)
2 Tbsp fresh salsa or 1/4 cup of tomato, chopped


Spray nonstick pan with avocado oil spray or alike. Cook turkey bacon until well done, chop and set aside. Add broccoli to the pan and add 1 Tsp avocado oil, and cook until soft. Stir in salsa into broccoli mixture and heat, then set aside in a bowl. Whisk egg, milk, scallions and salt and pepper in another bowl. Add 1 Tsp pf avocado oil to the skillet and pour in eggs, spread evenly and cook undisturbed until the bottom set on bottom, about 2 minutes. Using a wide spatula, carefully flip the egg and let cook for approx 1 more minute, or until set. Fill the lower half of the egg with broccoli mixture, fold like a tortilla and sprinkle with dairyfree cheese or cheese of choice
