Egg and Avocado Salad on Outer Aisle Low Carb Broccoli Pizza Crust

Serves 4


1 Pizza Crust
6 hard boiled eggs
2 Avocado (or store bought if you don’t have fresh)
1/4 cup basil leaves, chopped
1/4 cup green onions, chopped
3 Tbsp whole Greek yogurt, plain
1 Tsp lemon juice
1 Tsp garlic paste (or fresh garlic)
Salt and pepper to taste


Toast pizza crust. Cut the eggs into quarters, chop into pieces and place in a bowl. You can also use just the egg white, or some yolks, not all. Scoop the avocado and add to the chopped eggs. Add basil, green onions yogurt, lemon juice, and salt and pepper. Gently mix. Divide mixture into equal parts (4). Spread garlic paste all over the pizza crust, top with egg salad and garnish with basil.
